Adapted from a Sainsburys recipe card - meaning I ignored most of the ingredients and just used what I had instead:
- Trout fillets
- Enough couscous to cover the fillets
- Some mixed herbs (dried or fresh)
- Spinach leaves
- Chunk of mozzarella
- A plum tomato
- A few black olives
- Olive oil
- White vinegar
Really simple to cook, this - minimal effort required:
- Cook the couscous as per the pack instructions and leave to cool a bit
- Rub the skin side of the trout fillets with olive oil, then pat the couscous onto the fillets until covered. Put them in the oven for about 10-15 minutes until the couscous goes golden
- While they're cooking, chop up the tomato and the olives, rip off some bits of mozzarella, and chuck it all in a bowl. That's your salad.
- Mix some white vinegar and olive oil in a glass and whisk it with a fork. That's your salad dressing.
- Put the salad out onto a plate, drizzle with the dressing, and put the cooked fillets on top
And there you have it - filling, nutritious, and used up all the stuff in my fridge that was nearly out of date 
You never know, this might become a regular thing!
